Peanut Butter & All-Bran Cookies

Ingredients

240g melted butter (or dairy-free alternative)

135g brown sugar & 150g white sugar

1 tsp vanilla extract

250g peanut butter

2 eggs, beaten

150g plain flour

50 All-Bran original

65g rolled oats

2 tsp baking soda

Instructions

  1. Pre-heat the oven to 180 C or gas mark 4

  2. Combine the butter, sugar, vanilla extract, peanut butter and eggs in a basin and mix well together

  3. In a separate bowl, mix the remaining ingredients

  4. Stir both mixtures until well combined and smooth

  5. Drop rounded tsp of batter onto an ungreased cookie sheet

  6. Bake for about 15 to 18 minutes

  7. Remove from the sheet and let cool in a rack
