Lemon Bran Loaf

Ingredients

1 Egg

1 cup whole milk (or dairy-free alternative)

120g melted butter (unsalted, or dairy-free alternative)

2 tbsp lemon zest

1 cup All-bran

180g all-purpose flour

100g sugar

1 tbsp baking powder

1/2 tsp salt

For the glaze:

65g sugar

2 tbsp lemon juice

Instructions

  1. Pre-heat the oven to 170 C or gas mark 3.

  2. Beat the egg, milk, butter and lemon zest together. Stir in the bran cereal and set aside.

  3. In a large bowl, whisk the flour, sugar, baking powder and salt. Add the wet bran mixture to the bowl and stir until just blended. Pour into a greased loaf pan and bake for 55 to 60 minutes.

  4. Meanwhile, bring the remaining sugar and lemon juice to a boil in a small saucepan. As soon as the loaf is cooked, poke it all over with a skewer. Spoon the glaze over the loaf and allow it to soak it in. Leave it to cool in the pan and then remove it.
