Easy Banana Cake

Ingredients

125g butter

150g caster sugar

1 tsp vanilla extract

1 egg

2 very ripe bananas

190g self-raising flour

60ml milk

Instructions

  1. Grease and line a 2lb loaf tin. Melt the butter and add the sugar and vanilla extract in a saucepan over medium heat.

  2. Remove from the heat and add the mashed bananas mixing well.

  3. Incorporate the egg. Stir in the flour and milk.

  4. Pour into the prepared tin and sprinkle with a tbsp of sugar to give a crunchy topping if desired.

  5. Bake at 170 C/Fan 150 C/Gas 3 for 35 minutes.

  6. Leave to cool before cutting.
