Bread Pudding

Ingredients

227g bread

1/2 pint milk

170g mixed dried fruit

57g shredded suet

57g demerara sugar

1-2 tsp mixed spice

1 egg beaten

A little milk if needed

Instructions

  1. Grease a 1 1/2 pint pie dish.

  2. Chip bread into smalls cubes and pour the milk over it. Leave to soak for 30min then beat out the lumps.

  3. Add the dried fruit, suet, sugar and mixed spice mixing well.

  4. Add the egg with a little extra milk, if needed to get a dropping consistenty.

  5. Pour into the pie dish and bake in the middle of the oven at 170 C/Fan 150 C/Gas mark 4 for 1 1/2-2 hours.

  6. Sprinkle with sugar before serving.
