Pear Bread

Ingredients

3 1/2 cups of all-purpose flour

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

1/2 tsp ground nutmeg

1/2 tsp baking soda

1 1/2 cups sugar

1/2 cup vegetable oil

1/2 cup butter or margarine, melted

4 eggs

2 tsp vanilla extract

2 cups diced peeled pears

Instructions

  1. In a large bowl combine the flour, baking powder, salt, cinnamon, baking soda and nutmeg. Set aside.

  2. In a mixing bowl beat the sugar, oil and butter. Add the eggs, one at a time, beating well. Stir in vanilla.

  3. Stir into dry ingredients just until moistened (batter will be stiff). Stir in the pears. Pour into 2 greased loaf tins.

  4. Bake at 180 C/Fan 160 C/Gas mark 4 for 55-65 minutes, or a toothpick comes out clean.

  5. Cool for 10min before removing from tin to rack wire. Let cool.
